Hot Cross Buns can be found everywhere around this time of the year. At Easter time you see these mouth-watering glazed buns crossed with sweet icing in every bakery and supermarket. It seems like for a short period Hot Cross Buns have taken over.

In keeping with our philosophy that homemade is best made, here is a quick and simple Hot Cross Bun recipe for the whole family to try. Ingredients for Hot Cross Buns

Ingredients

4 cups all-purpose flour

3 teaspoons yeast

½ cup sugar

½ teaspoon salt

1 teaspoon cinnamon

½ teaspoon nutmeg

2 teaspoons orange zest

1 teaspoon vanilla essence

½ cup dried raisins

½ cup dried currants

4 tablespoons butter

1 cup warm whole milk

Glaze

2 teaspoons water

4 tablespoons granulated sugar

Icing Cross

½ cup confectioners’ sugar

2 teaspoons whole milk

Directions for Hot Cross Buns

Directions

Add warm milk and yeast to a small bowl, then stir.

Combine eggs, butter, sugar, salt, cinnamon, nutmeg, orange zest, essence, yeast mixture and 3 cups flour in a large bowl; then beat on medium speed until smooth.

Stir in raisins, currants and remaining flour to form a soft sticky dough.

Turn onto a floured surface, knead until dough is smooth and elastic for 6-8 minutes.

Place in a bowl, turning once to grease the top.

Cover with cloth and let rise until doubled for 1 hour.

Preheat oven at 350 degrees F.

Bake for 15-20 minutes or until golden brown.

Remove from oven and let cool slightly.

Stir granulated sugar and water in a small bowl.

Glaze top of buns with sugar and water mixture.

Mix confectioners’ sugar and milk in a small bowl until thick.

Pipe a cross with the icing on top of each bun.

Serve Hot Cross Buns with Passion Fruit Drink, Sorrel Drink or Guava Drink (see recipes).

Green Banana Casserole for lunch

A green banana casserole is a tasty cheesy dish that completes any meal on a Sunday. With very few ingredients and a whole lot of cheese you can whip up a magnificent green banana casserole in no time for your whole family. Try this simple recipe for lunch which is a healthier alternative to the traditional Sunday macaroni casserole which can wreck havoc on a low carb diet. If you are diabetic this recipe could help you maintain a healthy blood sugar level and still have your comfort food.

Ingredients

1 bunch (hand) green bananas, boiled and peeled

2 eggs (optional)

1/2 cup evaporated milk

1/4 cup melted butter

8 oz New Zealand Cheddar Cheese, grated

1 onion

2 pimento peppers

Salt and pepper to taste

Making green banana casserole in Sweet T&T

Directions

Cut up and mash the boiled bananas in a bowl, mix in all the ingredients, but only half of the cheese.

Spread evenly into a casserole dish, add the remainder of the cheese to the top of your casserole.

Bake at 350 degrees Fahrenheit for 30 minutes or until the crust is golden brown.
