Yam Casserole is quick, simple and most importantly healthy. Also, yam can be easily grown. If there should ever be a shortage of grain to make macaroni pie, you have the option to keep your Sunday lunch tradition alive with this yam casserole.

Making a Yam Casserole
5 pounds yam
1 cup evaporated milk
2 eggs (optional)
2 pounds cheese
½ cup green seasonings (chadon beni, chives, celery, parsley, thyme)
1 small onion
2 cloves garlic
3 pimento peppers
1 teaspoon sugar
1 teaspoon salt (optional)
1 large carrot

Boil yam with skin for 20 minutes.
Peel the yam and mash it with a potato masher.
Grate cheese on side of grater with large holes.
Dice green seasonings, onion, garlic and peppers.
Grate the carrot.
Add to mashed yam evaporated milk, eggs, ½ of the grated cheese, diced green seasonings, onion, garlic, carrot and peppers, sugar and salt.
Mix gently with pot spoon and turn into a baking dish.
