4 small tomatoes

1 pound cheese

1 cup water

Ā½ teaspoon butter, margarine or oil

Ā½ teaspoon salt

Blender (for pureed vegetables option)

2 small or 1 large Pyrex dish

Parchment paper or brown bag

Directions

Prepare and set aside

Wash eggplant/melongene/baigan and turn them horizontally.

Slice thinly into small circles.

The vegetables in the eggplant casserole can either be chunky or pureed.

For chunky option, dice the tomatoes, bell/sweet pepper, carrot, onion, garlic, seasonings and sprinkle with salt.

For pureed option, chop into small parts the tomatoes, bell/sweet pepper, carrot, onion, garlic and seasonings, pour water into blender, add vegetables and salt, and puree.

Grate cheese.

Use paper (parchment or brown bag) and butter, margarine or oil to grease inside of dish.

Steps for layers of eggplant casserole

Here are the steps to make a balanced eggplant casserole. You may add more or less ingredients in each step since it does not affect the taste or presentation of your eggplant casserole. If you prefer a cheesier casserole, add more cheese to your delight.

Step 1

Sprinkle 4 tablespoons of cheese in dish to make crust at bottom of casserole.

Spread 2 tablespoons of vegetables in dish (chunky or pureed).

Add slices of eggplant/melongene/baigan to cover vegetables.

Step 2

Sprinkle 2 tablespoons of cheese on top slices of eggplant/melongene/baigan.

Spread 2 tablespoons of vegetables over cheese (chunky or pureed).

Add slices of eggplant/melongene/baigan to cover cheese.

Repeat this step until there are no more vegetables and slices of eggplant/melongene/baigan. Make sure you have enough cheese remaining to cover the top of the casserole.

Step 3

Cover the top of the eggplant casserole with cheese.

Bake in oven at 350 degrees Fahrenheit for 45 minutes.

Let cool before serving. Enjoy.
