Ingredients
8 small tomatoes
5 cloves garlic
1 large onion
1 tablespoon mustard
¼ teaspoon each parsley, oregano, cayenne pepper powder (your choice of herbs)
1 cup water
2 tablespoons margarine or cooking oil
Directions
Chop the onion and garlic cloves finely
Cut the tomatoes into chunks
Heat margarine or oil in pot on a low fire for a minute
Sauté the chopped onion and garlic for about 3 minutes
Add tomatoes, mustard and herbs
Stir pot blending all ingredients
Add water gradually while stirring
Cover pot and let cook for 8 to 10 minutes
Serve Tomato Stew with whole wheat bread or whole wheat crackers.
