Making vegetarian patties
Ingredients
Dough
2 cups all-purpose flour
2 tablespoons turmeric powder
1 tablespoon baking powder
1 teaspoon salt
1 teaspoon sugar
2 tablespoons butter
1 egg
2 tablespoons vegetable oil
2 cups warm water
Filling
2 potatoes
1 cup pigeon peas
1 carrot
½ teaspoon ground geera
¼ teaspoon chili powder
1 teaspoon salt
2 tablespoons combined green seasonings (chive, celery, parsley, chadon beni, thyme)
½ teaspoon lemon juice
2 tablespoons vegetable oil
4 cups water

Directions
Soak pigeon peas the night before with teaspoon baking soda, then boil until soft unless you use canned peas.
Boil potatoes and carrot just until they can be easily pierced with a toothpick, then dice them.
Heat oil in a frying pan on a medium fire.
Add pigeon peas, diced potatoes and carrot, geera, chili powder, salt, green seasonings, lemon juice and mix.


Add flour, baking powder and salt to a large bowl, mix, then stir in butter and egg.
Pour water gradually and knead dough until a soft smooth dough, cover with cloth and let rest for 1 hour.
Roll out dough, fill each roll with filling and form into patties.
Bake in a preheated oven for 20 minutes or until evenly browned.
Serve warm.
