JOB DESCRIPTION
JOB TITLE: FOOD AND BEVERAGE COST CONTROLLER
Desired Experience and skills
- Must be mature and reliable
- Good interpersonal skills and must be a quick learner
- Good verbal and written communication skills
- Good analytics and reporting skills
- The ability to work without supervision and must be flexible to work on a shift basis required
Key Responsibilities
- Control the Food and Beverage outlets in terms of wastage, pilferage and efficiency
- Responsible for maintaining the Menu Pricing, Consumption and POS systems
- Check the menu pricing on the POS systems and ensure that the correct prices are loaded
- Check and ensure all menu items have a recipe
- Update and maintain receipts into the systems
- Check and verify discounts on the POS systems
- Check and verify all complimentary sales in POS systems
- Check and verify all staff meals and staff discounts
- Continuously study weaknesses in F&B control implemented at the restaurants and provide suggestions for improvements
- Responsible for surprise spot checks at all F&B outlets
- Spot check on the receiving department to ensure that the scales are correct and goods are checked for quality
- Check and ensure that no item of stock is transferred out from the store (for any reason) without requisition or approval from the respective Restaurant General Manager / Area Manager.
- Maintain the security of the information held by the department
- Perform other related duties as assigned
