Ingredients

1 pound smoked herring fillets

1 large onion

1 large tomato

2 cloves garlic

¼ sweet pepper

2 pimento peppers

½ scotch bonnet peppers (optional)

2 tablespoons olive oil

Directions for smoked herring

Boil the smoked herring fillets for 10 minutes.

Clean and remove as many bones as possible, especially the larger ones.

Shred the smoked herring fillets into smaller pieces.

Dice up the onion, tomato, garlic and peppers.

Option 1

    Tasty coconut bake recipe for breakfast

    Try this tasty coconut bake recipe that goes well with smoked herring and salt fish buljol for breakfast.

    Ingredients

     3 cups flour

    2⁄3 cup water

    1/2 teaspoon salt

    2 tablespoons sugar

    1 dried coconut (grated)

    2 teaspoons baking powder

    1 ounce butter or 1 ounce margarine

    Method for coconut bake

    In a bowl, sift together the flour, salt and baking powder.

    Add the butter, then stir in the sugar and grated coconut.

    Add water and mix into a firm dough.

    Next, turn the dough out on to a floured board, knead lightly, shape into a ball and leave covered for 15 to 20 minutes.

    Press in the centre and using a rolling pin, roll into a circular shape to desired thickness.

    Preheat the oven to 350°F.

    Put on a flat, greased baking sheet and bake for 20 to 30 minutes until brown.

    Remove from the oven and cut into desired shape 2 to 3 inches wide.

    Serve hot, then arranged on a flat dish.

    You can make mini coconut bakes instead of a large one using this same recipe. From start to finish it should take approximately 45 minutes.
