Banana fritters a breakfast favourite

Since bananas are always in season and generally affordable, banana fritters make a simple alternative to pancakes and syrup. Here is a quick and easy vegetarian recipe for banana fritters.

Making banana fritters

Ingredients

3 very ripe bananas1 cup all-purpose flour1 teaspoon baking powder1 tablespoon cinnamon powder2 tablespoons sugar½ teaspoon salt1 teaspoon baking powder1 tablespoon cinnamon powder1 teaspoon vanilla essence1 teaspoon lemon juice

Directions

Add flour, baking powder, sugar and salt to a large bowl, then mix.

Mash bananas with hands or potato masher, add to mixture and mix until soft and smooth.

Add essence and lemon juice, then mix.

Heat oil in deep-fryer to 375 degrees F.

Spoon the batter for each fritter and place in oil.

Scoop fritters out of hot oil with a skimmer spoon and place on parchment paper to drain.

Serve hot.
